What is Cinnamon? 

The spice comes from the bark of the Cinnamomum zeylanicum tree. Cinnamon and cassia are the dried barks of Asian evergreens that are related to the Laurel family. The Hebrew called it "qinnämön", and this is the source of the term Cinnamon now in use. Sri Lanka is the major source of cinnamon. The tree is indigenous to the island and its bark is harvested twice a year during the rainy season. The inner bark is split and peeled off to dry; forming the curled up sticks.

Cinnamon History - In China, recorded use goes as far back as 2000 BC. Because of its preservative and antiseptic qualities, Egyptians mixed cinnamon into their embalming powder. Asians have burned cinnamon as incense in temple ceremonies for centuries. Romans were thought to use it in perfumes and as wine flavorings. In Biblical times, it was commonly listed as an ingredient in oils used to anoint the body. Ancient Greeks enjoyed the sweetness of cinnamon in this way, too, and also used cinnamon to flavor wine. Imported only from Ceylon, the spice was difficult to get and very expensive; consequently only the very rich could enjoy it. Nero was said to have burned a year’s worth of it on his murdered wife’s funeral pyre to show the depth of his loss. Cinnamon now also grows in Egypt, where it was introduced in the 19th century.
