What is Vanilla?
A plant native to Mexico now common in areas throughout the West Indies and Indian Ocean. The pod is used to make extracts which we use in cooking. The whole pod may also be purchased and used as a fragrance or split and scraped to allow the tiny seeds to flavor the dish. Also comes in a liquid extract form, which is made by processing vanilla beans in an alcohol-water solution. Make sure the vanilla extract you buy contains vanilla and alcohol only, and not vanillin, for best flavor. Vanillin (C8H8O3 or C8 H8 O3), is an artificial ingredient made from wood. Vanilla comes from an aromatic bean of one variety of orchid (Vanilla Planifolia). The bean or extract are used to heighten the flavor of other ingredients. Pure vanilla is relatively expensive due to the culturing process and time consuming extraction process.

Vanilla History started in Mexico and was brought back to Spain by Cortez in 1528. Vanilla and Cacao beans were introduced to Cortez in Mexico in 1520 in a drink called Chocolatl (Cacao beans, corn, vanilla, honey, and chili peppers) This is a modern adaptation recipe for Chocolatl. It's an intriguing story of how much Europe loved Vanilla and started a huge spice trade over it, as the Royalty and rich peoples "needed" it to make life more livable. I highly recommend reading both of these vanilla books about a portion of spice trade history: "Vanilla: A Cultural History Of The World's Most Popular Flavor and Fragrance" (gives recipes for Chocolatl, or Aztec Xocolatl recipe) or "Vanilla: Travels In Search Of The Ice Cream Orchid".
